The vegetables you should avoid canning are:

What vegetables are not good for canning?

These two vegetables should not be processed in a canner. You don't experience any ill effects, but the pressure canning process will render them so mushy and soft that they won't be palatable to eat. A better alternative is to pickle them and then process them quickly in the water bath canner.

What foods are not safe for canning?

Low-acid foods are the most common sources of botulism linked to home canning. These foods have a pH level greater than 4.6. Can you can vegetables from the grocery store?

Unless you are pickling them, all vegetables must be canned using a pressure canner. Some vegetables, like pumpkin, should never be canned at home at all. All fruits and pickled vegetables can be safely canned in a boiling water bath. Always start with hot, sterilized jars and lids.
